Banana Egg Pancakes



VEGETARIAN/PALEO/GLUTEN FREE/DAIRY FREE/COCONUT OIL/SUGAR FREE

Another wonderful discovery in my search for egg based vegetarian dishes. This recipe is just what it says, bananas and eggs. Super easy and quick to make. The texture takes getting used to, and if you’re my husband you’ll never like them.







Ingredients
- 1 banana, mashed
- 2 eggs
- 2 tbs coconut oil (I order coconut oil in bulk from www.bulkapothecary.com. It’s cheaper than any store outside of the Caribbean. Stores in North America charge a ridiculous amount for such a simple/healthy product.)

Recipe
  1. Mix bananas and eggs. You can use a hand blender to make the mix smooth, or by hand and leave it a bit lumpy. I like it lumpy. J
  2. Heat oil in the pan at medium/high.
  3. Cook as you would with normal pancakes. It’s easier to manage smaller ones. The pancakes tend to be a bit fragile at first. I usually use 1/8 cup per pancake.
  4. Cook until golden brown on both sides.
  5. Serve by itself or with honey/syrup.
