Has browns are my favorite breakfast item. Whenever I have
breakfast out it must be included in my dish or I’ll order it as a side. While
some restaurants like to pass off chunks of fried potato as hash browns, there
is nothing like grated potato hash.
Ingredients
2 Large Potatoes, peeled and cut into large pieces
Coconut oil
Salt and pepper to taste
Recipe
- Boil potatoes for 5 minutes. This is important. The potatoes cannot be fully cooked at this point or else you’ll end up with fired mashed potatoes.
- Run potatoes under cold water or let cool until comfortable to handle.
- Grate potatoes on medium side of grater. The texture of the grated potatoes should be sticky, and the potato should be easy to make into small cakes.
- Make potato cakes about 3 inches wide.
- Heat 2tbs of coconut oil in frying pan.
- When pan is hot add cakes and cook on each side until golden brown.
- Place cooked hash browns on paper towel to absorb excess oil.
- Serve with your other favorite breakfast foods. Tastes great with ketchup or by itself.
